Hearty Chicken Pilau Biryani

Chicken pilaf/polow or pulao is one of the easy and tasty pilaf recipe. This is a mild spicy, warming, simple and colourful meal for a lazy weekend with family members . It is flavoured with spices, chicken, fresh coriander leaves,

Chicken Pilaf

  • 4 pieces of chicken breast or thigh
  • 2 cups rice, washed and soaked in salted water for 1 hour
  • 2 tbsp plain yogurt
  • 2 medium tomatoes, diced
  • 2 medium onions, cut thinly
  • 1 tsp ginger, grated
  • 1 tsp garlic, grated
  • 1 lemon juice
  • ½ tsp turmeric
  • ½ tsp cumin
  • 1½ tsp curry powder
  • ½ tsp ground cinnamon
  • ⅓ tsp ground cloves
  • 1 tsp paprika
  • 1 small bunch of coriander
  • salt and pepper to taste
  • vegetable oil
  1. In a large bowl, marinate chicken meat with yogurt, lemon juice, red chilli and some of grated ginger and garlic (keep remains of garlic and ginger for later). Mix all ingredients together and allow to rest for 1 hour.



  2. Meanwhile, heat the oil in a pan. Add all spices: turmeric, curry powder, cinnamon, cardamom, cloves, red chilli powder and remaining of grated garlic and ginger.



  3. Fry them for few seconds and then add chopped onion. Once onion is soften,



  4. add diced tomatoes and marinated chicken. Gently stir all together.



  5. Now add some chopped coriander leaves, slat and rice to the mixture.



  6. In this step, add 3 cups of water.(Any cup you use for rice, use same cup for water too).Mix all ingredients together. Allow to coo for 10 minutes on medium heat.



  7. Then sprinkle more coriander leaves on top of rice. Cover the rice with a lid and let to cook for 15-20 minutes on medium to low heat.



پلو مرغ

پلو مرغ یکی از آسونترین و خوشمزه ترین غذاهای برنجی هست. در این پلو مرغ از انواع ادویه های معطر و رنگارنگ استفاده شده ولی طعم ملایمی داره. یک پلو آسان- خوش رنگ و مزه که مخصوصن آخر هفته‌ها با اعضای خانواده خیلی میچسبه. در چند پست قبلم بریانی مرغ و بریانی تخم مرغ رو به اشتراک گذاشتم. این پلو مرغ نوع ساده‌تر بریانی مرغ هست.

مواد لازم

چهار تکه گوشت ران یا سینه مرغ

دو پیمانه برنج

دو ق غ ماست

دوعدد گوجه‌فرنگی متوسط خرد شده

دو عدد پیاز خلالی خرد شده

یک ق چ زنجبیل رنده شده

یک ق چ سیر رنده شده

یک ق غ آب‌لیمو ترش

نصف ق چ زیره

نصف ق چ زردچوبه

یک و نیم ق چ ادویه کاری

نصف ق چ دارچین

یک سوم ق چ پودر میخک

یک ق چ پودر پاپریکا

یک دسته کوچک گشنیز خرد شده

نمک و فلفل قرمز به میزان نیاز

روغن مایع

طرز تهیه

اول از همه تکه‌های گوشت مرغ را داخل یک‌کاسه با ماست – آبلیمو ترش – کمی فلفل قرمز- و مقداری از زنجبیل و سیر رنده شده مخلوط کرده و کنار میگذاریم تا برای یکساعت گوشت طعم دار شود.

مقداری روغن مایع را در تابه ریخته و تمام ادویه ها شامل: زردچوبه- پودر کاری- دارچین – هل- میخک- فلفل قرمز و باقی زنجبیل و سیر رنده شده را برای چند ثانیه در تابه طعم می دهیم. سپس پیاز خلالی شده را اضافه کرده و تفت می‌دهیم تا نرم شود.

حالا نوبت اضافه کردن گوجه‌فرنگی های خرد شده و گوشت مرغ به مواد داخل تابه هست. به آرامی همه مواد را با هم مخلوط کنید.

در این مرحله مقداری گشنیز خرد شده- نمک- و برنج خیسانده شده را همراه با 3 پیمانه آب به مواد داخل تابه اضافه می کنیم. از هر پیمانه که برای اندازه‌گیری برنج استفاده کردید از همان پیمانه هم برای آب استفاده کنید.

تمام مواد داخل تابه یا قابلمه را به آرامی با هم مخلوط کنید. اجازه دهید به مدت ده دقیقه بپزد وقتی مقداری از آب برنج کاسته شد. کمی گشنیز خرد شده روی برنج بریزید. در قابلمه را گذاشته واجازه دهید به مدت 15 دقیقه روی حرارت ملایم بوده تا پخته شود.

  1. This looks very much like the Arroz con Pollo dish I always get at my favorite Mexican restaurant. I’ve looked for Arroz con Pollo recipes online, but I’ve never found one that resembles what I get at the restaurant. I’ll definitely try this recipe of yours.
