Curry-Coriander Naan Bread نان کاری

You do not need tandoor to bake flat naan bread at home. In English language The naan نان, a word that just means bread in its original Persian, is a flatbread native to west, central and southern Asia .

Naan traditionally baked in a clay oven that is called Tandoori تنور . But nowadays, life is easier and we can bake these yummy flat breads at home in a pan. Easy peasy☺

Naan is a staple food in Iranian cuisine and in everyday breakfast, lunch or dinner we have different types of Persian naan bread.

You can get your daily fresh naan bread for breakfast, lunch or dinner from bakery, while you are waiting in long queue to get your delicious warm bread.

In following naan bread recipe, there is no baking powder, or yeast. Just with flour, salt and spices I baked these wonderful naan bread. One more thing I should mention is: this naan bread is a kind of semi soft naan bread.

For flavouring I added curry and coriander powder and that’s why this bread is called curry-coriander naan. But you have loads of choice. You can add any dried herbs or spices you wish 🙂 So as you see it is very flexible recipe.

For topping the baked bread you can use butter or olive oil along with a plate of Feta cheese and tomatoes or with soup.

Ingredients

275 g plain flour

140ml lukewarm water

1 tbsp olive oil

1 tsp salt

1 tsp curry powder

1 tsp coriander powder

Sieve the flour, salt, coriander and curry powder into a bowl. Use a wooden spoon and make a well in the flour and pour in warm water and 1 tbsp of olive oil. Mix it with hand until you all ingredients come together and you have a nice elastic dough. If dough is sticky , add a little bit flour.

Cover the dough and set aside for 15 minutes. After 15 minutes, divide the dough into 6 pieces. On a floured surface, use rolling pin and roll each dough ball into an oval or round shape.

Heat grill pan (if not available, simply use ordinary pan). Grill pan make nice ridges on the surface of naan bread, but as I mentioned it is not a MUST.

Place flatten naan on the pan and cook for 2-3 minutes each side. Then remove and drizzle with remaining of olive oil and serve it.

نان کاری-گشنیز

در خونه ی ما اینقدر نان رو دوست داریم که من از درست کردن انواع نون های مسطح سیر نمیشم. امروز دو نوع نون میخوام معرفی کنم که نه تنها طعم عالی دارن و شاید خیلی کم در جایی دیده باشید – بلکه در عرض کمتر از نیم ساعت این نون ها رو میشه پخت و نکته آخر در مورد این نان‌ها این هست که از خمیر ترش و یا از بیکینیگ پودر خبری نیست.

لازم نیست که حتمن یک تنور داشته باشیم که بتونیم نون مسطح در منزل درست کنیم. حتی به فر هم نیاز نیست و با یک تابه معمولی میشه این نون ها رو پخت و همه از تون خواهند پرسید چطوری این نون های خوشمزه رو درست کردی؟

کلمه نان که در کشورهای اروپایی و هند هم بکار میره از زبان فارسی گرفته شده و در رستورانها اگر بخواهید از این نان‌ها سفارش بدید از کلمه ی نان استفاده میشه.

نان عضو ثابت سفره ایرانی هست که در صبحانه – ناهار یا شام همیشه کنار باقی غذاها دیده میشه. نان کاری-گشنیز از ترکیب آرد سفید با نمک و ادویه درست میشه. خیلی خیلی آسون- سریع و خوشمزه هست. وقتی نان آماده شد روی نان را با کره یا رغن زیتون زده ونوش جان کنید.

مواد لازم

دویست هفتادو پنج گرم آرد سفید

دو ق غ روغن زیتون

یک ق چ نمک

یک ق چ پودر کاری

یک ق چ پودر تخم گشنیز

صدو چهل میلی لیتر آب ولرم

طرز تهیه

آرد را همراه با ادویه ها و نمک الک می کنیم. با یک قاشق وسط آرد یک گودی درست میکنیم و آب ولرم و یک ق غ روغن زیتون را افزوده و اول با قاشق چوبی همه مواد را مخلوط میکنیم و بعد روی سطح آردی خمیر را با دست ورز می‌دهیم تا به صورت یک‌دست در آید. به احتمال زیاد خمیر نباید به دستتون بچسبه همونطور که خمیری که من هم درست کردم چسبناک نشد ولی احیانن اگر دیدید خمیر چسبناک هست کمی آرد اضافه کنید.

خمیر آماده شده راداخل کاسه برگردانده ورویش را می پوشانیم تا ۱۵ دقیقه استراحت کند.

برای پخت این نان میتوانید از تابه معمولی استفاده کنید و یا از تابه هایی که سطح شیاردار دارند استفاده کنید که سطح نان را شکل شیار دار و قنشنگتری می دهد.

خمیر را بعد از ۱۵ دقیقه به ۶ قسمت می‌کنیم و تابه را به صورت خشک روی گازگرم می کنیم. هر چانه خمیر را روی سطح آردی با وردنه به صورت بیضی شکل یا گردباز کرده و قبل از گذاشتن داخل تابه آرد روی نان را تکانده و خمیر را داخل تابه میگذاریم تا هر روی نان به مدت ۳-۲ دقیقه پخته شوند.

روی نان را می‌توانید کمی روغن زیتون زده و با سوپ یا پنیر و گوجه سرو کنید. نوش جان
