Sunflower Seeds Halva حلوای تخمه آفتابگردان

Halva/halwa is very common thing in the Middle East and yet not well known in many countries.

Halva is a flour based sweet confection dish, tasty, delicious and you would love it.

Halva might be a combination of flour (wheat flour, rice flour, corn starch, semolina) with different ingredients such as sesame paste, sunflower seeds and nuts such as walnuts and pistachio, or vegetables like carrot.

Halva is an Arabic word means ‘ sweet’. The texture of halva vary, some of them are dense, some are moist and light.

Sunflower seeds halva is a nice combination of flour with sunflower seeds and nuts. This halva is popular in Eastern Europe countries. Halva usually is served in religious and funeral ceremonies.

Sunflower Seeds Halva

  • 450 g sunflower seeds
  • 150 g plain flour
  • 80 g walnuts
  • 2 tbsp raisins or cranberries or figs
  • 1 tsp candid orange peel

Ingredients for syrup

  • 150 g white sugar
  • 150 ml water
  • 60 g butter/Ghee
  • 15 ml vanilla essence
  1. In a pan, toast sunflower seeds for 2-3 minutes until golden brown.



  2. Do same with walnuts. Remove toasted walnuts.



  3. and toast the flour until change the colour.



  4. Add toasted sun flower seeds, walnuts and flour to a food processor, blend it until all seeds and nuts are broken.



  5. For making syrup, combine water, sugar, vanilla extract and butter/Ghee together. Place it on a medium heat and bring it to a boil.



  6. Add raisins-candied orange zest



  7. and syrup to the the sun flower paste and combine until well incorporated.



  8. Next transfer it into a mould. I used a deep bowl. Pop it in the fridge for 2 hours



  9. and voila it is ready. This halwa has a soft and moist texture with a pleasant flavour.



حلوای تخمه آفتابگردان

حلوا نوعی شیرینی معروف و پر طرفدار در کشورهای خاور میانه می باشد. ولی با اینحال در بسیاری از کشورها شناخته شده نیست.

حلوا معمولن از ترکیب آرد ( آرد گندمآرد برنجآرد ذرت و یا سمولینا) با مواد گوناگونی مثل ارده تخمه آفتابگردان و یا

مغز گردو و پسته و یا با سبزیجاتی مثل هویج تهیه میشود.

حلوا یک کلمه عربی می‌باشد و به معنی شیرین است. بافت حلوا ها با همدیگر فرق دارند. گاهی بعضی از آن‌ها غلیظ و بعضی نرم و شل می باشند.

حلوای تخمه آفتایگردان در کشورهای اروپای شرقی معمول می باشد. این حلوا ی خوشمزه از ترکیب آرد با تخمه افتابگردانگردو و میوه‌های خشک درست میشود.

کاربرد حلوا معمولن در مراسم مذهبی و مراسم تدفین می باشد.

 

مواد لازم

چهارصدو پنجاه گرم تخمه آفتابگردان

صدوپنجاه گرم آرد

هشتاد گرم گردو

دو ق غ میوه خشک مثل کشمش انجیر

یک ق چ پوست پرتقال

 

مواد لازم برای شربت

صدو پنجاه گرم شکر سفید

صدوپنجاه میلی لیتر آب

شصت گرم کره یا روغن مایع

پانزده میلی لیتر عصاره وانیل

 

طرز تهیه

داخل یک تابه تخمه آفتابگردان را ربخته و روی حرارت کم به مدت 3-2 دقیقه آن را مرتب هم می‌زنیم تا بوداده شود و رنگ آن تغییر کندو سپس از روی حرارت برداشته و. همین کار را با گردوها

انجام داده و آن‌ها را نیز تفت می دهیم.

آرد را هم داخل تابه ی خشک ریخته و تفت می‌دهیم تا رنگ آن تغییر کند.

تخمه و گردوی بوداده را همراه باآرد تفت داده داخل بلندر یا غذاساز ریخته

و همه ی مواد را مخلوط میکنیم تا بصورت خمیر مانندی در آید.

برای تهیه شربت آب شکر عصاره وانیل و کره را داخل قابلمه ریخته و روی حرارت متوسط قرار می‌دهیم تا بجوش آید.

در مرحله ی بعدیکشمش هاپوست پرتقالو شربت را روی خمیر آماده شده ریخته و همه ی مواد را با هم مخلوط کرده

تا کاملن با هم ترکیب شوند. حلوای آماده شده را برای شکل دادن می‌توان داخل قالب ریخت که من

آن را داخل یک‌کاسه گود ریختم . قالب رابه مدت 2-1 ساعت در یخجال قرار می‌دهیم تا خودش را بگیرد

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
