Carrot-Ginger Soup سوپ هویج و زنجبیل

A light and smooth carrot soup with ginger. A good choice for cold weather with light bright colour and flavourful. Very easy and quick soup to prepare and enjoy a yummy soup specialy with caramelized onions and yogurt topping is so delicious.

Carrot-Ginger Soup

  • 8 carrots peeled and cut into pieces
  • 2 medium potatoes, diced
  • 3 large onions, peeled and chopped
  • 2 cloves of grlic, grated
  • 2 tbsp white sugar
  • 2 tbsp fresh ginger, grated
  • 2 chicken or vegetable stock cubes
  • 1 tsp pepper
  • ½ tsp nutmeg
  • ½ tsp orange zest
  • Plain yogurt for topping
  • Salt to taste
  1. Heat the oil in a saucepan over medium heat and sauté onion until softened (it will take about 10 minutes). Stirring occasionally. In last 3 minutes, add grated ginger and orange zest,nut meg, sugar, salt and pepper to the onion too.



  2. Divide onion into two parts and set aside.



  3. Add chopped carrots, potatoes to a pot. Dissolve chicken stock in 4cups of boiled water and the liquid to the carrots mixture.



  4. Bring it to a boil and then turn the heat down to low and simmer for 40 minutes until carrots and potatoes are cooked and tender.



  5. Remove from the heat. Add half of the sauted onion to the soup.



  6. Using a blender and puree the soup until smooth.



  7. Once soup is ready, add 1-2 tbsp of yogurt



  8. and also second half of sauted onion and combine together.



  9. Ladle the soup into the bowls/plates and top each plate with plane yogurt and enjoy it. It is yummy soup.



سوپ هویج و زنجبیل

سوپ جزو غذاهایی هست که همیشه طرفدارداره . بعضی از سوپ ها با طبع گرمی که دارن غذا یا پیش غذای مناسبی برای فصل پاییز و زمستون هستن. یکی از همین سوپ ها سوپی هست که امروز درست کردم.

سوپ هویج زنجبیل یکی از سوپ های سبک با طعم متفاوت و خوشمزه هست که از ترکیب هویج با زنجبیل تازهپوست پرتقال رنده شده –و پیاز سرخ شده درست میشه و با اضافه کردن ماست زمان سرو می تونید طعم یک سوپ خوشرنگ و خوشمزه رو امتحان کنید

مواد لازم

هشت عدد هویج – پوست گرفته و خرد شده

دو عدد سیب زمینی متوسط خرد شده

دو عدد پیاز درشت نگینی خرد شده

دو حبه سیر رنده شده

دو ق غ شکر سفید

دو ق غ زنجبیل تازه رنده شدهتوصیه نمیکنم از پودر زنجبیل استفاده کنید چون طعم زنجبیل تازه رنده شده کاملن متفاوت هست

دو قرص عصاره سبزیجات و یا مرغ

یک ق چ فلفل

نصف ق چ جوز هندی

نصف ق چ پوست پرتقال رنده شده

ماست برای روی سوپ

نمک به میزان لازم

روغن زیتون

 

طرز تهیه

مقداری روغن را درون تابه و روی حرارت متوسط گرم کرده و پیاز نگینی خرد شده را تفت می‌دهیم تا نرم شود همزدن پیاز هم گاهگاهی یادمون نره. تفت دادن ئیاز تقریبن ده دقیقه طول میکشد.

در دوسه دقیقه آخر زنجبیل رنده شدهجوز هندیشکرپوست پرتقال رنده شدهنمک و فلفل را هم به پیاز در حال تفت افزوده و همه ی مواد را با هم تفت می دهیم. پیاز آماده شده را به دو قسمت کرده و کنار میگذاریم.

هویج و سیب زمینی خرد شده را داخل یک قابلمه ریختهعصاره سبزیجات یا مرغ را داخل چهار پیمانه آب جوش حل کرده و روی هویج و سیب زمینی می‌ریزیم . سوپ را روی حرارت بالا به جوش آورده و بعد حرارت را روی متوسط تنظیم کرده و اجازه میدهیم تا هویج و سیب زمینی ها نرم پخته شوند. در این مرحله نصف پیاز آماده شده را به سوپ افزوده و با بلندر سوپ را به صورت پوره در می آوریم. وقتی سوپ پوره شده یکی دو قاشق غذاخوری ماست و باقیمانده ی پیازرا افزوده وبا قاشق مواد را با هم مخلوط می کنیم.

زمان سرو کمی ماست روی سوپ می ریزیم.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
