Yarma Corbasi سوپ بلغور/ یارما شورباسی

Any kind of soup, specially in Winter time is always favourite in my house. Today, I made a local soup, which is called Yarma Corbasi یارما شورباسی or bulgur soupسوپ بلغور. Basically you do not need a long list of ingredients, very few ones which are usually available in most kitchen’s shelves.

Bulgur یارما/بلغور has lots of benefits: it is a good source of protein, fiber, minerals such as magnesium and iron, rich in vitamin B6, also it is low in fat.

Yarma or bulgur (crushed wheat grain) is a common ingredient for making soup, salad, bulgur rice, ..

Bulgur soup, is one easiest and at the same time tastiest hearty- healthy soups ever. Bulgur wheat is main ingredient and very easy to cook it. This soup is ready just in 30 minutes.

This soup has different recipes and based on personal taste , some of ingredients can change.

Yarma Corbasi سوپ بلغور

  • 1 cup bulgur wheat
  • 2 medium onions, finely chopped
  • 2 cloves of garlic, grated
  • 2 tbsp butter
  • 2 tbsp plain flour
  • 1 tbsp tomato paste
  • 1 tsp chilli paste
  • 1 tsp dried mint
  • 1 tsp turmeric
  • 1-2 vegetable or meat stock cubes
  • 3 tbsp Olive oil
  • Salt and pepper to taste
  • 10 cups water
  1. Heat the oil in a saucepan or pot over medium-low heat. Add chopped onions. Sauté until tender. Next, add in flour and cook for 2 minutes. Keep stirring.



  2. Then add tomato paste and chilli paste to onion mixture and keep frying for 1 minute.



  3. Pour in 1 cup water and gently mix all ingredients together until you have a smooth liquid.



  4. Add bulgur, salt- pepper, turmeric, Pour in 10 cups of water. Add chopped garlic and meat/vegetable stock cubes. Stir soup for few minutes.



  5. Bring it to a boil, then reduce the heat, and cook for 25-30 minutes, until the bulgur is soft and tender. Taste before serving and adjust seasoning.



  6. Meanwhile, melt the butter in a pan, add dried mint and fry for 10 seconds. Remove from the heat. Once soup is done, serve hot with mint sauce on the top. You can also garnish the soup with plain yogurt and mint sauce or use lemon juice.



یارما شورباسی/سوپ بلغور

هر نوع سوپ مخصوصن در فصل پاییز و زمستون در منزل ما مورد استقبال قرار میگیره. امروز یک سوپ محلی درست کردم که در زبان آذری یارما شورباسی نامیده میشه که همون سوپ بلغور  هست. در‌واقع برای تهیه ی این سوپ اصلن نیازی به لیست بالابلند از مواد اولیه نیست و با چند ماده ی اولیه که در قفسه ی بیشتر آشپزخونه ها هست میشه این سوپ لذید رو درست کرد.

بلغور /یارما خواص زیادی برای بدن ما داره: منبع خیلی خوب پروتئین و فیبر هستمنبع مواد معدنی همچون منیزیم و آهن هست حاوی ویتامین ب6 بوده و چربی کمی داره.

یارما یا یلغور به دانه‌های گندم خرد شده گفته میشه و از اون برای تهیه سالادسوپ وآش یا بلغور پلو میشه استفاده کرد.

سوب بلغور یکی از آسون ترین و در عین حال خوشمزه ترین سوپ هایی هست که میتونید درست کنید و از عطرو مزه اش لذت ببرید.

این سوپ خوشرنگ و خوش مزه در عرض نیم ساعت حاضر میشه . دستور تهیه های مختلفی برای یارما شورباسی میشه پیدا کرد که بر اساس ذائقه شخصی بعضی از مواد اولیه را در سوپ کم وزیاد میکنن.

مواد لازم

یک پیمانه بلغور گندم

دو عدد پیاز متوسط نگینی خرد شده

دو حبه سیر رنده شده

دو ق غ کره

دو ق غ آرد

یک ق چ نعنا خشک

یک ق غ رب گوجه‌فرنگی

یک ق چ سس فلفل

یک ق چ زردچوبه

یک یا دو عدد قرص عصاره سبزیجات یا گوشت

نمک و فلفل به میزان لازم

دو سه ق غ روغن زیتون

ده پیمانه آب

طرز تهیه

روغن مایع را داخل یک تابه یا قابلمه ریخته و روی حرارت متوسط قرار دهید. پیاز نگینی خرد شده را داخل قابلمه ریخته و تفت میدهیم تا کمی نرم شود. سپس آرد را به پیاز افزوده و برای یکی دو دقیقه آن‌ها را با هم تفت می دهیم در  حالیکه مرتب آن را هم می زنیم.

در مرحله ی بعدیرب گوجه‌فرنگی و سس فلفل را هم به مواد داخل قابلمه اضافه کرده و یک دقیقه دیگر همه ی مواد را با هم حرارت می‌دهیم و بعد یک پیمانه آب روی آن‌ها ریخته و به آرامی همه ی مواد را با هم مخلوط می‌کنیم تا ارد تفت داده شده به صورت گلوله گلوله باقی نماند و یک مایه یک‌دست و روان و نسبتن غلیظ داشته باشیم

حالا زمان اضافه کردن بلغور– – نمک فلفلزردچوبه همراه با ده پیمانه آب هست. بلغور آب زیادی رابخود جذب میکند برای همین نیاز به این مقدار آب هست.

همینطور سیر رنده شده و عصاره سبزیجات یا گوشت را هم باقی مواد داخل قابلمه افزوده و سوپ را هم زده و میگذاریم تا سوپ بجوش آید. سپس حرارت را کم کرده و میگذاریم تا سوپ به مدت 30-25 دقیقه و تا زمانی که بلغور نرم شود پخته و سوپ جا افتاده و لعابدار شود..

تا آماده شدن سوپکره را داخل یک تابه آب کرده و نعنا خشک را با کره برای چند ثانیه سرخ میکنیم. وقتی سوپ آماده شده آن را در ظرف مورد نظر ریخته و روی آن نعنا داغ می ریزیم. همینطور می‌توان همراه نعنا داغ کمی ماست هم روی سوپ قرار داد و یا لیمو ترش به سوپ اضافه کنید.
