Persian Tomato Omelette

Tomato omelette or Omlet-e gojeh- farangi املت گوجه فرنگی as we say in Farsi, is one of the best egg recipes. I would say it is one of the most delicious and at the same time simplest omelette ever. It is a perfect choice for a lazy weekend breakfast or a light dinner. Persian tomato omelette is similar to Shakshuka شاکشوکا which is made of poached eggs, tomato sauce and spices like cumin, nutmeg, pepper. In Iranian version of tomato omelette, we do not use same spices.

The ingredients for making tomato omelette are very simple: eggs, tomatoes , tomato puree and spices. Tomato omelette is a popular egg dish in Iran and in many of traditional Tea houses, which is called (Chai-Khaneh چایخانه ) in Farsi language, usually serves with flat naan bread and soft-fresh herbs (Sabzi khordan سبزی خوردن. ) such as radish تربچه, spring onions پیازچه, chives تره, mint نعنا,

Preparing this omelette is easy and result production is gorgeous and delicious.

Persian Tomato Omelette املت گوجه فرنگی

  • 4 eggs
  • 2 tomatoes, chopped
  • 2 tbsp tomato paste
  • Salt and pepper to taste
  • 3 tbsp butter or vegetabl oil like: olive oil, sun flower oil
  1. Dice the tomatoes into small piece. Melt the butter in a pan over medium heat. You know cooking with butter give extra flavour and taste to any food. But of course you can use vegetable oil too. I love olive oil but you can use sun flower oil, or for hazelnut oil, but you know butter is something else and is just perfect for our tomato omeltte. anyways, when butter melted, add diced tomatoes.



  2. Maybe you ask, can i use canned tomatoes, yes of course you can, but always fresh vegetable is more tastier than canned ones. So after adding tomatoes to the melted butter, Sprinkle with salt and pepper. Cover the pan with a lid and cook it for a good 5 minutes. Stirring time to time until tomatoes softened evenly and break down. Add tomato pure to fried tomatoes



  3. Mix together and cook for 2 minutes. Now we have a creamy tomato mixutre , like a sauce like a puree.



  4. Crack the eggs over tomato sauce.



  5. Gently stir until well combined. Season with more salt and pepper if required. Cover the pan with a lid and cook it until eggs are set. After eggs cooke, our tomato omelette is ready to eat. Serve it with good flat naan bread if you like or with Ciabatta bread, or sour dough bread and fresh sabzi (greens).



املت گوجه فرنگی

املت گوجه‌فرنگی یکی از خوشمزه ترین و در عین حال ساده‌ترین املت هایی هست که میشه

تهیه کرد. این املت یک گزینه خیلی مناسب برای صبحانه آخر هفته و یا یک شامل سبک خواهد بود.

املت گوجه‌فرنگی ایرانی کمی شبیه به املت شاکشوکای تونسی هست که با تخم مرغ – – سس گوجه‌فرنگی  و ادویه هایی مثل زیره- و جوز هندی درست میشه اما در املت گوجه فرنگی ایرانی از این ادویه ها در تهیه املت گوجه فرنگی استفاده  نمیشه. یکی از دوستان یونانی که از پیج من دیدن کرده بود میگفت این املت در یونان با نام کاگیاناس معروف هست و با تخم مرغ – گوجه فرنگی و پنیر فتا درست میکنن و معمولن برای صبحانه در تابستان سرو میشه. ..

این املت در ایران بسیارمحبوبیت و طالب فراوانی دارد وحتی در قهوه خانه‌های سنتی هم آن را همراه با ترشی – سبزی خوردن و نان تافتونسنگک یا لواش سرو میکنند.

مواد لازم

چهار عدد تخم مرغ

دو عدد گوجه‌فرنگی

دو ق غ رب گوجه‌فرنگی

سه ق غ  کره ویا روغن مایع 

نمک و فلفل به میزان نیاز

طرز تهیه

کره و را داخل یک تابه ریخته و روی حرارت متوسط قرار می دهیم تا اب شود. همانطور که همه میدونیم کره عطرو طعم خاصی به هر غذا میده ولی اگربه هر دلیلی از کره نمیخواهید استفاده کنید میشه از روغن زیتون – روغن آفتابگردان و … استفاده کرد.  گوجه های خرد شده را داخل تابه و ریخته و نمک و فلفل اضافه میکنیم. کمی گوجه ها را هم می‌زنیم و آن‌ها را تفت می‌دهیم تا نرم و تقریبن له مانندشوند. در این مرحله رب گوجه‌فرنگی را اضافه میکنیم و برای دودقیقه مرتب هم می‌زنیم تا رنگ رب گوجه تیره شود.

حالا ما یک سس خوشرنگ و غلیظ گوجه‌فرنگی داریم که تقریبن پوره مانند شده است..

تخم مرغ ها را داخل سس گوجه‌فرنگی شکسته و به آرامی مواد را با هم مخلوط میکنیم. کمی مزه کرده و اگر نیاز به نمک و فلفل بیشتری داشت اضافه میکنیم . در تابه را گذاشته تا تخم مرغ ها پخته شوند.

املت خوشمزه و خوشرنگ امان را همراه با نان تازه  و خوشمزه  و سبزی خوردن یا ترشی سرو میکنیم. نوش جان
