Vavishka واویشکا دوست دارید

Northern part of Iran is called ‘Shomal شمال=North’ in Farsi language, and it is located near the Southern shores of the Caspian sea. It’s a beautiful green land, covered with Hyrcanian forests, famous Iranian rice and tea fields.

North of Iran is one of favourite destinations for summer time with amazing nature, clean weather far from air pollution and loads of beautiful villas for rent. People are so friendly and welcoming with tasty meals.

Gilan province استان گیلان in Northern part of Iran, lies along the Caspian Sea. Gilan borders the Russia across the Caspian Sea. Gilan province is a beautiful green land with load of forests, also in tourism industry is one of the tourists attraction. Each city in Iran has kinds of local foods.

Vavishka واویشکا or Bavishka باویشکا is one of the famous, local and traditional food from Gilan. Vavishka is a kind of simple stew. It is a super duper easy recipe to follow. It can be made with ground beef/lamb/chicken or liver, tomatoes, onions, and aromatic spices.

Oh I forgot to say, Vavishka literally means (fried). Vavishka is great over the rice or with flat naan bread or go with any. So if you are looking for a comfort and silky food, vavishka is one of those, try it.

ٰVavishka

  • 400 g minced beef/lamb
  • 1 tin tomato pasata
  • 3-4 medium potatoes, cut into cubes
  • 2 eggs
  • 1 large onion, finely chopped
  • 2 tbsp tomato paste
  • 2 cloves of garlic, grated
  • ½ cup water
  • 1 tsp turmeric
  • ½ tsp paprika powder
  • ½ tsp pepper
  1. Heat the oil in a saucepan. Add diced onion and fry it until tender.



  2. Add spices: turmeric, paprika, pepper and fry them for 1-2 minutes until aroma of spices developed.



  3. Add grated garlic, and the minced beef in and fry until the meat browns.



  4. Next, add pasata and tomato paste to the meat and season with salt Give a good stir and



  5. then add ½ cup water. Simmer for 10-15 minutes on a low heat.



  6. Meanwhile, heat the oil in a separate pan. Add diced potatoes. Season with salt and pepper and fry them until crispy.



  7. Once vavishka got ready, we should add eggs. Crack eggs on the meat



  8. and gently break the eggs and sprinkle some salt. So, You do not need scramble the eggs, just chunks. put the lid on the pan and allow to cook the eggs for 2-3 minutes.



  9. That’s it and our vavishka is ready. Traditionally, vavishka is served with rice or flat naan bread (or go with any bread you love it).

شمال ایران به علت طبیعت بینظیرهوای سالم و پاک – ویلاهای زیباغذاهای متنوع و متبوع و مردمی دوست‌داشتنی و مهمان‌نواز یکی از مقاصد مسافرت بخصوص در تابستان است

استان گیلان در شمال ایران واقع شده است و یکی از مراکز گردشگری و جذب توریست ایران محسوب میشود. هر یک از شهرهای ایران دارای غذاهای متنوعی هستند.  واویشکا یا باویشکا یکی از غذاهای محلی و معروف استان گیلان می‌باشد.

در شهرهای گوناگون استان گیلان این غذا به صورت‌های مختلفی تهیه میشود. ماده ی اصلی در این غذا گوشت چرخ کرده هست ولی میتوان از گوشت مرغ و دل مرغ هم استفاده کرد.

واویشکا را میتوان با برنج و یا با نان سرو کرد.یادم رفت بگم واویشکا یعنی سرخ شده. پس اگر دنبال یک غذای ساده ولی با طعمی بسیار لذیذ هستید که بافتی ابریشمی و خورشتی داره حتمن واویشکا رو امتحان کنید.

مواد لازم

چهار صد گرم گوشت چرخ کرده گوساله یا گوسفندی

چهار عدد گوجه‌فرنگی درشت رنده یا پوره شده

یک عدد پیاز بزرگ نگینی خرد شده

دو عدد تخم مرغ

دو ق غ رب گوجه‌فرنگی

سه چهار عدد سیب زمینی خرد شده

دو حبه سیر رنده شده

یک دوم پیمانه آب

یک ق چ زردچوبه

یک یا نصف ق چ فلفل

نصف ق چ پاپریکا

نمک به میزان نیاز

روغن مایع

طرز تهیه

مقداری روغن را در تابه گرم کرده و پیاز خرد شده را افزوده و تفت می‌دهیم تا نرم شود. سپس تمام ادویه های ذکر شده را به پیاز اضافه کرده و یکی دو دقیقه تفت می‌دهیم تا عِطر ادویه ها آزاد شده و به مشام برسد. در مرحله ی بعدی – سیر رنده شده را همراه گوشت چرخ کرده به مواد داخل تابه اضافه کرده و گوشت را سرخ میکنیم تا قهوه ای رنگ گردد.

سپس رب گوجه‌فرنگی و گوجه های رنده شده را روی گوشت ریخته و نمک لازم را اضافه میکنیم.

و مواد را با هم مخلوط میکنیم. نصف پیمانه آب در تابه ریخته و اجازه میدهیم برای ده – پانزده دقیقه مواد داخل تابه روی حرارت کم به آرامی جا بیفتد.

تا آماده شدن واویشکاسیب زمینی های خرد شده را داخل تابه ریخته و نمک و فلفل به اندازه نیاز زده و سیب زمینی ها را سرخ کرده و کنار میگذاریم.

زمانیکه واویشکای ما حاضر شد میشه تخم مرغ هم به اون اضافه کرد. تخم مرغ ها رو روی واویشکا شکسته و خیلی جزیی تخم مرغ ها رو پخش میکنیم کمی نمک زده و میگذاریم دو سه دقیقه تخم مرغ ها هم پخته شوند.

به همین راحتی واویشکای ما الان حاضر هست. به صورت سنتی میشه واویشکا رو با کته یا با نان لواش یاهر نوع نان مورد علاقه اتون سروکنید.
