Iranian Naan Fateer

Fatir/fateer فطیر or kiloocheh کلوچه are souvenirs from various cities and towns of Iran. Some of famous places in Iran, that are well known for baking Fateer are: Shirazشیراز,Hastrud هشترود, Tabrizتبریر, Ardebil اردبیل, Semnanسمنان, Arak اراک, Fomanفومن, khozestan خوزستان, and lahejan لاهیجان.

Fateer is a stuffed pastry, a kind of sweet naan bread.

Today, I am going to present Naan Fatir نان فطیر from Hashtrud هشترود.

Hashtrud هشترود is an old town, located in SE of Tarbiz in NW of Iran. There are 8 rivers in this town and that’s why it is called Hashtrud. Hasht means number 8 and rud means river in English language.

Hashtrud has a cold winter with a nice sunny summer time. Most of population is involved in agriculture. Hashtrud with beautiful historical and natural tourist resources, is one of tourism attractions.

This naan fateerفطیر is yummy and long lasting. It is best to keep Fateer naan bread at room temperature in an airtight container.

Iranian Naan fateer نان فطیر هشترود

  • 7½ cups plainflour (1 cup=166g)
  • 1 cup lukewarm water
  • 1 cup lukewarm milk
  • ½ cup white sugar
  • ½ cup vegetable oil
  • 1 tbsp yeast powder
  • ½ tsp turmeric powder
  • 3 eggs,take3 eggs , separate one egg yolk for egg wash

Ingredients for filling

  • 1 cup plain flour
  • 1 cup white sugar
  • 80 g Ghee or unsalted butter (Ghee is clarified butter)
  • 1 tsp turmeric
  1. First is first: we prepare filling: add sugar, flour, ghee and turmeric in a bowl,



  2. and mix together until well combined and set aside.



  3. Line a baking tray with parchment paper. Now,we are going to prepare the dough. In a large bowl, add sugar, Yeast powder, turmeric,



  4. Lukewarm water, lukewarm milk, oil, and 3 eggs (separate one egg yolk forlater).



  5. Mix together until well combined and then, transfer the mixture into a mixing bowl.



  6. then, gradually add 7 cups of flour to the mixture



  7. and mix together until you have a slightly sticky dough.



  8. Now, spread ½ cup of flour on the working surface and place the dough on it.



  9. Knead the dough for 3-4 minutes. Now we have a nice well combined dough. Place the dough in a bowl. Cover it with a kitchen towel and let to rest for 1 hour.



  10. After one hour, dough will be doubled in size.



  11. Divide the dough into 10 pieces. Give a round shape to each dough. Cover it with a kitchen towel for 30 minutes.



  12. Preheat the oven to 200C degree. Take one dough. Make it flat,



  13. place 1 tbsp of filling at the centre of dough



  14. and then bring the edges together and seal it properly.



  15. Repeat the process with remaining of ingredients. Arrange them on the baking tray. Using your fingers and slightly press down each dough. leaving space between them.



  16. Mix egg yolk with 1 tsp of milk and brush top of dough.



  17. Then, with a fork, make motive on the surface of bread.



  18. Also, poke holes on the dough.



  19. Place the tray in the oven and bake for 20-25 minutes.



  20. Then remove from the oven. Rub butter on top of each bread. Leave to cool completely. Store them in an airtight container.



نان فطیر هشترود

نان فطیر /فتیر نوعی نان یا کلوچه محلی می‌باشد که دارای طعم شیرین ملایمی می باشد. بعضی از انواع نان فطیر مغزدار بوده و و بعضی به صورت ساده تهیه میشوند. نان فطیر فوق‌العاده خوش عِطر و طعم بوده و برای صبحانه یا عصرانه همراه با چایکره – پنیر یا عسل یا مربای گل محمدی صرف میشود..

فطیر/فیتر در نواحی مختلف ایران پخت میشود.

از معروف ترین مناطقی که فطیرهای خوشمزه درست میکنند میتوان به فطیر شیرازسمناناراکزنجانسبزوارخوزستاناردبیلهشترود و تبریز اشاره کرد.

در بعضی از مناطق ایراننان فطیررا در نوروزپخت میکنند . فطیر همینطور در مراسم مذهبی نیز کاربرد دارد.

امروز مایلم نان فطیر هشترودی را معرفی کنم. شهرستان هشترود در جنوب شرق تبریز قرار دارد. جریان هشت رودخانه در این شهر باعث شده این شهر زیبا به هشترود معروف باشد. بیشتر جمعیت هشترود به فعالیت کشاورزی مشغول هستند. هشترود با داشتن جاذبه های تاریخی و طبیعی یکی از مناطق جذب گردشگری محسوب میشود.

نان فطیرهای هشترودی بسیار خوش طعم و لذیذ می‌باشندو میتوان به راحتی در دمای اتاق و داخل ظروف در دار برای مدت طولانی نگه داری کرد.

مواد لازم

هفت پیمانه و نیم آرد سفید= هر پیمانه ی من برابر است با صدوشصت و شش گرم

یک پیمانه شیر ولرم

یک پیمانه آب ولرم

نصف پیمانه روغن مایع

نصف پیمانه شکر سفید

یک ق غ پودر خمیر مایه

نصف ق چ زردچوبه

سه عدد تخم مرغیکی از زرده ها را جدا کرده برای رومال نگه میداریم

مواد لازم برای میانه نان

یک پیمانه آرد سفید

یک پیمانه شکر

هشتاد گرم کره بدون نمک یا روغن محلی : اگر خارج از ایران هستید از روغن گی استفاده کنید

یک ق چ زردچوبه

طرز تهیه

در ابتدا مواد میانی فطیر را حاضر میکنیم: داخل یک‌کاسه شکرآردروغن محلی و زردچوبه را ریخته و هم میزنیم تا

کاملن با هم مخلوط شوند. قرار گرفتن این مواد کنار هم یکی از خوشمزه ترین مواد میانی فطیر را تشکیل می دهد.

کاملن با هم مخلوط شوند.

داخل سینی فر را با کاغذ روغنی پوشانده و آماده نگه میداریم.

حالا خمیر را حاضر میکنیم: داخل یک‌کاسه ی بزرگ شکر آب و شیر ولرمروغن مایع پودر خمیر مایهزردچوبه و سه تخم مرغ ( یکی از زردها را کنار میگذاریم تا بعدن برای رومال استفاده کنیم) ریخته و همه ی مواد را با مخلوط میکنیم.

سپس هفت پیمانه از آرد را ( دقت کنید فقط هفت پیمانه) کم کم به مواد بالا افزوده و هم میزنیم تا یک خمیر نرم و کمی چسبناک داشته باشیم. در این مرحله نیم پیمانه ی آخر آرد را روی سطح کار ریخته و خمیر را روی آرد قرار داده و به مدت 4-3 دقیقه خمیر را با دست ورز میدهیم. حالا یک خمیر یکدست و منسجم داریم. 

خمیر را داخل کاسه قرار داده و روی آن را می پوشانیم تا یکساعت استراحت کند.

بعد از یکساعتخمیرا را به ده گلوله خمیر برش می دهیم. روی خمیر ها را با دستمال پوشانده و نیم ساعت کنار میگذاریم.

فر را روی حرارت 200 درجه سانتیگراد گرم میکنیم.

حالا یکی از گلوله های خمیر را برداشته و آن را کمی صاف کرده و یک ق غ از مواد میانی که قبلن حاضر کرده بودیم وسطخمیر قرار داده و لبه های خمیر را روی آن قرار داده و به صورت گرد در میاوریم : همانطور که در تصاویر می بینید.

نان فطیرها را داخل سینی فر چیده و با انگشت و خیلی آرام خمیر را به سمت پایین فشار داده تا کمی مسطح شوند.

یک زرده ی تخم مرغ باقی‌مانده را با یک ق چ شیر مخلوط کرده و روی فطیرهامی مالیم

سینی فر را به مدت 25-20 دقیقه داخل فر قرار داده تا پخته شوند.

بعد از پختفطیر ها را از فر خارج کرده و روی هر یک را کمی کره  می زنیم. نان فطیرهای آماده شده

را  میتوان داخل ظرف در دار و خارج از یخچال نگه داری  کرد. .

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.   1. Hello, Rozina! I just finish watching a video on YouTube by a Trinidadian showing us how to make fry bakes. The method and the finished product are quite similar. Of course the culture differences are noticeable. But that goes to show that citizens of the world have a lot more in common than many people think. Stay safe, my friend.

    1. Hi Noel, Yes very true. However geographically we are located in different places but yet there might be similarities between us. Being multicultural country with wide range of ethnicities, tradtions and religions, can be one of the factors for having similarities., i think. And you take care too.
