Gosh-e Feel (Elephant Ear Pastries)

Gosh-e feel گوش فیل in Farsi means elephant ear. Maybe you ask why elephant ears? Well, Gosh-e feel Made by shaping dough into the elephant ear shape pastry and after fried, garnished with crushed pistachios.

Deep fried Pastries such as gosh-e feel گوش فیل, zoolbia زولبیا (jalebi) and bamieh بامیه are baked thorough out the year but are more popular sweets in holy month of Ramadan.

Gosh-e Feel گوش فیل

  • 600 gr plain flour, sifted
  • 2 eggs
  • 6-7 tbsp milk
  • ½ cup sunflower oli
  • 1 tsp baking powder
  • pinch of salt
  1. start by beating the eggs, salt, baking powder and vegetableoil very well.

  2. Then add beaten eggs to the sifted flour and whisk the ingredients.



  3. Next, Gradually add the milk, as required: (between 6-7tbsp).




  4. Knead the dough with hand, until come together and you have a well combined dough. You can add 2-3 tbsp more flour if needed. Cover the dough with a cling film and leave to rest for 1 hour.



  5. After1 hour, knead the dough for 1 minute and then, divide it into 4 pieces.



  6. Place one dough on a floured surface. Using a rolling pin and flatten the dough. Then with a cookie cutter, cut the dough, into circle shape, as you see in the photos.




  7. Next stop, take one of circle cut dough and flatten with rolling pin and then



  8. pinch half of a circle as you see in the photos and make an elephant ear shape.




  9. Fry them in hot oil until golden( it will take about 2 minutes).





  10. Then remove from the oil. Let them cool down for few minutes and then place them into the cold syrup and leave the pastry in the syrup for 1 minute. Then take them out of the syrup and place them in a plate, garnish with chopped pistachio and ready to serve.

گوش فیل یکی از شیرینی های پرطرفداردر بین ما ایرانیان هست که در تمام  طول سال در قنادی ها پخت میشود ولی درماه مبارک رمضان – شیرینی گوش فیل همراه با زولبیا و بامیه بیشتر تهیه و مصرف میشه. شکل این شیرینی چون تقریبن شبیه به گوش فیل هست به این نام معروف شده.

مواد لازم

ششصد گرم آرد سفید

دو عدد تخم مرغ

شش هفت ق غ  شیر

نصف پیمانه روغن مایع

یک ق چ بیکینگ پودر

کمی  نمک

طرز تهیه

تخم مرغ ها را داخل یک‌کاسه شکسته و همراه با بیکینگ پودرنمک و روغن  مایع هم میزنیم. سپس آرد الک شده را هم به مایه آماده شده افزوده و کمی مواد را با هم مخلوط میکنیم و بعد شیر گرم را کم کم و به اندازه نیاز به خمیر اضافه کرده و خمیر را ورز داده تا همه ی مواد با هم مخلوط شد ه و به صورت یک خمیر نرم و یک‌دست درآید. اگر نیاز بود میتوان دو سه ق غ آرد بیشتری به خمیر افزود تا زمانی که بدست نچسبد. .

روی ظرف را پوشانده تا به مدت یک ساعت خمیر استراحت کند.

بعد از 1 ساعت خمیر را روی سطح آردی قرار داده و یک دقیقه ورز میدهیم و بعد خمیر را به چهار قسمت تقسیم میکنیم. با این خمیر آماده شده می‌توان مقداربسییییییار زیادی گوش فیل تهیه کرد.

یکی از خمیر ها را روی سطح آردی قرار داده و با وردنه باز میکنیم تا به صورت یک ورقه نازک دربیاید . سپس با یک کاتر گرد خمیر را برش می دهیم: مطابق تصاویر

در این مرحله یکی از خمیرهای دایره شکل را برداشته و با وردنه مجددن کمی آن را  بیشتر نازک میکنیم و یک طرف دایره را با انگشت جمع میکنیم تا چین بخوردو شبیه به گوش فیل شود

روغن را داخل قابلمه داغ کرده و خمیرهای شکل داده را برای دوسه دقیقه در روغن داغ سرخ کرده تا طلایی شوند و بعد از روغن خارج نموده وکمی که سرد شدند به مدت یک دقیقه گوش فیل های سرخ شده را داخل شربت سرد غوطه ور کرده تا شهد به خورد شیرینی برود.

برای تزیین روی گوش فیل ها میتوان از پسته خرد شده و یا پودر هل استفاده کرد.
