Scrambled Eggs with Feta Cheese and Dill پنیر برشته

Gilan Province استان گیلان is in Northern part of Iran, lies along the Caspian Sea دریای مازندران. Gilan borders the Russia across the Caspian Sea. Gilan province is a beautiful green land with load of forests, also in tourism industry is one of the tourists attraction. Each city in Iran has kinds of local foods.

There is the diversity of food (170 recipes) in Gilan Province. One of local and famous dishes from this region, is Paneer Bereshteh پنیر برشته which is called: Paneer Wavij پنیر واویج in the local language.

پنیر برشته =scrambled eggs with cheese

Panir Breshte is made with eggs, dried dill leaves, garlic, turmeric and a kind of local cheese that is called: Siah-Mazgi سیاه مزگی. Eggs are a good source of high quality protein and that’s why this simple, inexpensive and quick recipe, would be a healthy meal that you can make it less than 10 minutes.

If you can not find the local cheese (Siah-Mazgi) , use Feta cheese instead. As I mentioned, this dish is called Paneer breshteh, which literally means crispy paneer/cheese but actually it is not crispy at all and on the contrary is soft scrambled eggs with Cheese. Paneer breshteh, can be served as a side dish or serve with steamed rice or bread as a light dinner or lunch.

Persian Scrambled eggs with Feta Cheese and Dill پنیر برشته

  • 4 eggs
  • 200 g local cheese or feta cheese, broken into small pieces
  • 2 cloves of garlic, grated
  • 1 tbsp dried dill leaves
  • ¼ tsp turmeric powder
  • salt and pepper to taste
  1. Ingredients



  2. Break the cheese into small pieces and set it aside. Crack the eggs in abowl. Add dried dill leaves. Season with salt and whisk the eggsuntil mixed well and set it aside too.




  3. Melt some butter in a pan over medium-lowheat.Add turmeric powder and freshly ground pepper. Saute for a few seconds.




  4. Then, add grated garlic and fry it for a minute. Now, addpieces of cheese and fry 1-2 minutes.



  5. Now,add pieces of cheese and fry 1-2 minutes.




  6. Finally,add the mixture of beaten eggs into the pan and mix all ingredients. Keep stirring until the eggs are scrambled and set. Serve panir breshteh with rice or flat naan bread.




پنیر برشته

یکی از غذاهای محلی و سنتی شمال ایران بخصوص استان گیلان پنیر برشته نام دارد که در عین سادگی خیلی خوشمزه هست و در گویش محلی به نام های پنیر دبیج / پنیر وورشته و پنیر وروشون پنیر واویج گیلانی هم معروف میباشد.

پنیر برشته از مخلوط تخم مرغ بانوعی پنیرمحلی شوید خشکسیر و زردچوبه تهیه میشود.

اگر از سیریا شوید خوشتون نمیاد میتونید آن را حذف کنید البته سلیقه ای میباشد ولی سیر و شوید طعم این غذا را دوچندان میکند.

پنیر برشته در عرض ده دقیقه یا کمتر آماده میشود.  اسم این غذا که پنیر برشته نام داردولی اصلن ترد و برشته نبوده و برعکس نرم میباشد.

برای تهیه این غذا از نوعی پنیر محلی به نام پنیر سیاه مزگی گیلان استفاده میشه ولی اگر مثل من به این پنیر خوشمزه محلی دسترسی ندارید میتوان از پنیر تبریزیلیقوان یا پنیر فتا هم استفاده کرد.

پنیر برشته یک غذای ساده – فوری و کم هزینه ولی مقوی هست که با داشتن تخم مرغ منبع غنی پروتئین میباشد. این غذای خوشمزه را میتوان با کته یا نان سرو کرد.

مواد لازم

چهار عدد تخم مرغ

دویست گرم پنیر محلی یاپنیر فتا/لیقوان/ تبریزی

دو حبه سیر

یک ق غ سر پر شوید خشک شده

یک چهارم ق چ زردچوبه

نمک و فلفل به میزان لازم

کره به میزان نیاز

طرز تهیه

پنیر را به تکه‌های کوچک خرد کرده و کنار میگذاریم.

تخم مرغ ها را داخل یک‌کاسه شکسته و شوید خشک را همراه با کمی نمک به تخم مرغ ها افزوده و همه ی مواد را هم زده تا یک‌دست شده و کنار میگذاریم.

تابه را روی حرارت متوسط قرار داده و مقداری کره را در تابه آب میکنیم. سپس زردچوبه و فلفل را برای چند ثانیه تفت میدهیم و بعد سیر رنده شده را افزوده یک دقیقه تفت میدهیم .

حالاپنیرهای خرد شده را به مواد داخل تابه افزوده و پنیر را ۲۱ دقیقه سرخ میکنیم. در انتها مخلوط تخم مرغ را به تابه اضافه کرده و همه ی مواد داخل تابه را به آرامی هم میزنیم تا مخلوط شوند و میگذاریم تا برای چند دقیقه تابه روی حرارت مانده تا تخم مرغ ها پخته شوند.

پنیر برشته را میتوان با کته یا نان سرو کرد. نوش جان
