German Meat Patties

These flat pan fried ground meat patties or meatballs are known as Frikadellenفریکادلن In Germany, Denmark, Scandinavian countries and Mielone kotlety in Poland. These meatballs are made from minced meat, eggs, chopped onions, bread crumbs, and spices. You can serve these meat patties as a main course or side dish.

German Meat Patties

  • 500 g ground meat
  • 4 slices of one-two-days old bread
  • 1 large onion, very finely chopped
  • 1 eggs
  • 2 cloves of garlice, grated
  • 1 tsp mustard sauce
  • 1 tsp sweet paprika powder
  • Handful parsley leaves, finely chopped
  • salt and pepper to taste
  • Vegetable oil
  1. Ingredients




  2. Soak slices of toast bread or baguette bread in a bowl of water or milk for 15-20 minutes. Then drain, and squeeze out excess water,crumble and set aside.




  3. Heat the oil in a pan and fry the onion until softened..




  4. Add the meat, egg, cooked onion, grated garlic, soaked crumbledbread, parsley, mustard sauce, salt, pepper, and paprika, into a bowl.




  5. Use your hand and mix until well blended. Refrigerate meat mixture for 15 minutes. .




  6. Shape meat mixture into flattened meatballs. Heat the oil in a pan.



  7. Place the meatballs on the pan and fry them until browned both sides and well cooked.

    Serve them with mashed potatoes or boiled potatoes or serve as youwould a hamburger sandwich. You can serve these meat patties as a main course or side dish.





 

کتلت آلمانی

فریکادله کتلت آلمانی میباشد که نه تنها در آلمان بلکه در دانمارک ودیگر کشورهای اسکاندیناوی هم به همین نام معروف بوده و محبوبیت دارد. این کتلت های خوشمزه از گوشت چرخ کرده گوساله با پیاز سرخ شده – تخم مرغ– – نان خیسانده شده در آب – سیر – سس خردل و ادویه درست میشود. کتلت آلمانی را با نان و یا سیب زمینی ابپز سرو میکنند.

مواد لازم

پانصد گرم گوشت چرخ کرده گوساله

چهار عدد نان تست یا نان باکت یکی دو روز مانده

یک عدد پیاز درشت نگینی خرد شده

یک عدد تخم مرغ

دو حبه سیر رنده شده

یک ق چ سس خردل

یک ق چ پودر پاپریکا

نمک و فلفل به میزان لازم

یک دسته کوچک جعفری خرد شده

روغن مایع

طرز تهیه

نان تست یا نان باگت را به مدت ۲۰۱۵ دقیقه داخل مقداری آب یا شیر قرار داده تا خیسانده شود. بعد از مدت ذکر شده نان‌ها را با دست فشار داده تا تمام آب یا شیر اضافی آن‌ها خارج شود.

مقداری روغن را در تابه گرم کرده یا کره را در تابه آب کنید و پیاز نگینی شده را تفت دهید تا نرم شوند. داخل یک‌کاسه گوشت چرخ کردهنان خیسانده شدهپیاز سرخ شدهسیر رنده شده سس خردلجعفری خرد شدهنمکفلفلو و پاپریکا را با هم مخلوط کرده و خوب ورز دهید تا به صورت یک‌دست در آید.

مایه گوشتی آماده شده را ۱۵ دقیقه داخل یخچال قرار دهید تا خود را بگیرد.

سپس مقداری روغن را در تابه گرم کنید . کتلت های آلمانی را با دست شکل دهید. کتلت آلمانی باید یک کتلت ضخیم و قطور باشد. پس مایه گوشتی را به اندازه یک پرتقال متوسط برداشته و به شکل همبرگر در آورده و در تابه قرار دهید.

تابه را روی حرارت متوسط قرار دهید تا پشت و روی کتلت ها به آرامی و کاملن پخته و سرخ شوند.

کتلت آلمانی با سیب زمینی ابپز یا پوره سیب زمینی سرو می‌شود. همینطور میتوان مانند ساندویچ همبرگر آن‌ها را لای نان ساندویچ قرار داده و با سس خردل سرو کرد.

Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
