Muhammara Dip

Roasted bell pepper and walnut dip is called Muhammara محمره . It is originated from Aleppo in Syria. It is a delicious, and easy vegan dip. It can be eaten as a dip and spread or as sauce for meats.

Key ingredient in this recipe is sweet red pepper (capsicum). Other ingredients for this recipe are pomegranagte molasses for sweetnese, bread crumbs to give a texture and thicknes the dip.

Muhammara has a super easy recipe. Traditionally, you should use mortar and pestle to keep the beautiful texture.

Muhammara Dip

  • 3 red bell peppers
  • ¾ cup walnuts
  • 2 tbsp pomegranage molasses
  • 1 tbsp sun flower oil
  • 1 tbsp lemon juice
  • 2 slices of bread (or 4tbsp bread crumbs)
  • 1 clove garlic, grated
  • ½ tsp ground cumin
  • Salt and pepper to taste
  1. Grill bell peppers top of stove. Cook them until soft and skin ischarred and burned. So we get that smoky flavour.




  2. Then, let them cool down and peel them off and remove the seeds.





  3. Add a little amount of oil and walnuts in a skillet and roast them over medium heat for 5-6 minutes. Then, remove from the heat.



  4. Add roasted walnuts, bread crumbs (or slices of bread), oil, pomegranate molasses, cumin, grated garlic, , lemon juice, grilled peppers to a food processor.




  5. Season with salt and pepper and pulse for a few minutes until blended and combined.






  6. Sprinkle with ground sumac (optional) and serve it with flat nan bread, or crackers and veggies.



دیپ محمره 

هر سفره یا میز غذایی این روزها با داشتن سینی مزه خیلی خوشمزه تر و اشتها برانگیز تر میشه و برای هر نوع گردهمی خانوادگی و دوستانه مناسب هست.

این روزها در آشپزی خیلی به کلمه ی دیپینگ سس یا دیپ بر میخوریمدیپ با سس فرق داره چون سس رو به غذا اضافه میکنیم ولی در مورد دیپ فرق داره و این خوراک و غذا هست که به دیپ اضافه میشه. . تنوع بسیار زیادی برای دیپ وجود داره و میشه خوشمزه های زیادی رو به عنوان دیپ درست کرد

یکی از این دیپ های خوشمزه محمره هست.

محمره از مخلوط فلفل دلمه کبابی با گردو تهیه میشود. محمره در اصل متعلق به شهر آلپو در سوریه میباشد.

دیپ محمره بسیار خوشمزه و گزینه ای مناسب برای افراد وگان و گیاهخوار نیز هست. این دیپ را میتوان برای سس در کباب ها و غذاهای گوشتی بکار برد و یا مانند کره روی نان زد و صرف نمود/

ماده ی اصلی در این غذا فلفل دلمه قرمز و شیرین میباشد. از مواد دیگری که در این دیپ بکار می‌رود میتوان به رب انار اشاره کرد که طعم شیرین به دیپ میدهد و همچنین نان خرد شده یا آرد سوخاری از مواد دیگر در این دیپ  هست که باعث می‌شود بافت دیپ مقداری ترد باشد.

طرز تهیه دیپ محمره بسیار آسان میباشد. در گذشته همه مواد لازم برای این دیپ را داخل هاون ریخته و میکوبیدند ولی امروزه از همزن برقی استفاده میشود.

مواد لازم

سه عدد فلفل دلمه قرمزززززز

سه چهارم پیمانه گردو

دو ق غ رب انار

یک ق غ روغن مایع

دو تکه نان تست یا چهار ق غ آرد سوخاری

یک حبه سیر رنده شده

یک ق غ آب‌لیمو ترش

نصف ق چ زیره

نمک و فلفل به میزان نیاز

طرز تهیه

فلفل دلمه ها را روی گاز قرار داده و کباب کنید تا زمانی که بافت فلفل ها نرم شده و پوست آن‌ها کبابی شده و بسوزند. سپس فلفل ها را از روی حرارت برداشته و وقتی سرد شدند پوست آن‌ها را گرفته و دانه‌های داخل فلفل هارا خارج میکنیم.

مقدار کمی روغن داخل تابه ریخته و گردوها را در تابه و روی حرارت متوسط به مدت ۶۵ دقیقه تفت میدهیم . سپس گردوهای تفت داده را همراه با آرد سوخاری یا نان تست خرد شدهروغنرب انارزیرهسیر رنده شدهآبلیمو ترش نمک و فلفل و فلفل های کبابی داخل غذا ساز ریخته ومواد را خرد میکنیم. سعی کنید زیاد به صورت پوره در نیایدو گردوها کاملن له نشوند.

این دیپ فوق‌العاده خوشمزه رازمان سرو میتوان با کمی سماق و گرود و همراه با  با نان یا سبزیجاتی مثل هویج کرفسخیار و یا کرکر سرو کنید.

I just discovered that the lovely, locally made muhammara that I have enjoyed for several years has disappeared from the shelves, along with all of the other items produced by that small company.
