Persian Spinach and Eggs Dish (Nargesi)

I love eggs and spinach as well, and my following recipe contains both of them. This Persian spinach and eggs dish, is called Nargesi نرگسی in Farsi.

This delicious vegetarian dish is from North شمال of Iran ایران . It is very notorious and and very very simple and easy in ingredients and preparation. It is full of flavour and spices.

Nargesi is made with Spinach, fried onion, eggs, garlic and spices .

Soooo, If you’re looking for a new and exciting recipe for breakfast or brunch ,THIS recipe is just for you. It is, amazingly delicious, healthy and easy way to impress your family members and friends.

Persian Spinach and Eggs Dish (Nargesi)

  • 500 g Spinach, washed and roughly chopped
  • 1 large onion, peeled and thinly sliced
  • 3 eggs
  • 2 cloves of garlic, grated (optional)
  • ½ tsp ground turmeric
  • Salt and freshly ground black pepper to taste
  1. Ingredients



  2. Clean spinach and wash it well in several changes of water. Then, Chop spinach roughly . Place chopped spianch in a pot along with 1 cup of water. And ½ tsp salt.



  3. Cover the pot and cook until spinach is wilted (it will take about6-7 minutes). Drain cooked spianch in a colander to get rid of extra water.



  4. Then, heat the oil in a skillet over medium heat. Add the onion and fry onion until golden.




  5. In this stage you can add grated garlic and fry for 1 minute , or if you do not like galirc, just skip it.



  6. Then, add salt- pepper- and turmeric to the onion and fry for a minute. Next, add cooked spinach, to fried onion.



  7. Give a quick Stir and cook for about 10 minutes until spinach start to lose water.



  8. Crack the eggs and add them to the Spinach mixtur in the pan. Season eggs with salt and pepper.



  9. Wait until the eggs are half cooked before mixing . Becasue it is important to have chunks of egg in this dish. And now our Spinach and eggs dish is ready.

    Serve Nargesi warm with yogurt and pita bread or any kind of your favourit bread.



نرگسی اسفناج

من شخصن غذاهایی که حاوی تخم مرغ و یا اسفناج باشه خیلی دوست دارم و غذای امروز خوشبختانه هر دو این مواد رو داره.

نرگسی اسفناج مخلوطی از اسفناجپیاز سرخ شدهسیر(اختیاری) و چند ادویه هست . نرگسی یکی از غذاهای خوشمزه و محلی شما کشورمون ایران هست.

نرگسی اسفناج یک غذای بسیار مفیده و خیلی خیلی آسون و سریع میشه در منزل آن را تهیه کرد : هم از نظر مواد مورد نیاز راحته و هم از نظر روش پخت.

پس اگر دنبال یک غذای هیجان انگیز برای صبحانه یا به عنوان یک ناهار یا شام سبک هستید – نرگسی اسفناج  بسیار مناسبه. یک غذای خیلی لذیذو سالم که تمام افراد خانواده و یا مهمان‌ها ی شمارا تحت تأثیر قرار خواهد داد.

مواد لازم

پانصد گرم اسفناج شسته و خرد شده

یک عدد پیاز درشت خلالی خرد شده

سه عدد تخم مرغ

دو حبه سیر رنده شده : اختیاری

نصف ق چ زردچوبه

نمک و فلفل سیاه به میزان لازم

و روغن زیتون

طرز تهیه

اسنفاج ها راچندین بار شسته و خرد میکنیم. : اما نیازی نیست خیلی ریز خرد شوند

اسفناج خرد شده را همراه با یک پیمانه آب داخل قابلمه ریخته و نصف ق چ نمک هم اضافه کرده – در قابلمه را گذاشته تا اسفناج پخته شود: تقریبن 7-6 دقیقه طول خواهد کشید.

سپس اسفناج پخته را داخل ابکش ریخته تا آب اضافی اسفناج گرفته شود.

مقداری روغن را داخل تابه گرم کرده و پیاز خلالی را در تابه ریخته و سرخ میکنیم تا طلایی شود. سپس سیر رنده شده را در این مرحله افزوده تا یک دقیقه سرخ شود: اما اگر از سیر خوشتان نمیاید خیلی راحت آن را حذف کنید.

سپس نمکفلفل و زردچوبه را به پیاز اضافه کرده و یک دقیقه سرخ کنید و بعد اسفناج پخته شده را به پیاز اضافه کرده

مواد را یک هم کوچک زده و میگذاریم تا به مدت ده دقیقه بپزد و اسفناج کاملن آب خود را از دست بدهد. در انتها تخم مرغ ها را شکسته و به اسفناج اضافه میکنیم – کمی نمک و فلفل به تخم مرغ ها زده و قبل از اینکه همه ی مواد را با هم مخلوط کنیم میگذاریم تخم مرغ ها کمی پخته و سفت شوند.

نرگسی خوشمزه ما آماده هست و میتوان به صورت گرم و همراه با نان و ماست آن را سرو کرد.
