Mini Victoria Sponge Cakes

This recipe will make you smile and enjoy your cup of tea or coffe with 1- 2 -3 or more cakes. As these mini victoria cakes are delightful and sooooo so yummy.

Mini Victoria Sponge Cakes

  • 175 g self raising flour, sifted
  • 175 g castar sugar
  • 175 g softened and unsalted butter
  • 3 eggs

Ingredients for filling

  • 140 g icing sugar
  • 100 g unsalted and softened butter
  • 150 g jam : strawberry, cherry, or raspberry
  • 1 tbsp milk
  • some icing sugar for dusting
  1. Preheat the oven at 180C degree.

    Butter cup muffin tray and set aside. In a large bowl, beat together butter and sugar until creamy.




  2. Then, add eggs. Beat together until well combined.



  3. Finally add flour to the butter mixture and beat



  4. until you have a smooth and soft batter.



  5. Divide the batter between the cup muffins. Place the muffin tray in the oven and bake for about 15-18 minutes until risen and golden.Then remove it from the oven and leave to cool Completely.




  6. Meanwhile, for making the filling, beat the 100g softened butterwith 140g icing sugar and 1tbsp milk, until creamy.




  7. Now, cut each cake into half. Cover one half with buttercream andone part with a spoonful of jam and sandwich it on top and dust withicing sugar.





کیک اسفنجی ویکتوریا

یکی از آسانترین و در عین حال خوشششششمزه ترین کیک های اسفنجی کیک اسفنجی ویکتوریا نام داره که نام خودش رو از ملکه ویکتوریا در انگلستان گرفته چون این کیک در مراسم چای عصرانه مورد علاقه این ملکه بوده برای همین هم به این نام معروف شده است.

این کیک از دولایه تشکیل می‌شود و لایه میانی با خامه یا باترمیلک و مربا : توت فرنگیتمشک یا مربای کرنبری پر می‌شود و روی کیک یا کیک ها با پودر شکر تزیین میگردد.

کیک ویکتوریا را میتوان در اندازه بزرگ و یا در اندازه های کوچک هم تهیه کرد.

مواد لازم

صدوهفتادوپنج گرم کره نرم و بدون نمک

صدوهفتادوپنج گرم شکر سفید

صدوهفتادوپنج گرم آرد سلف رایزینگ – الک شده

سه عدد تخم مرغ

مواد لازم برای فیلینگ یا مواد میانی کیک

صد گرم کره نرم و بدون نمک

صدوچهل گرم پودر شکر

یک ق غ شیر

صدوپنجاه گرم مربا

طرز تهیه

فر را روی 180 درجه سانیتگراد قرار دهید تا گرم شود. داخل قالب یا قالب‌های کیک را چرب کرده و کناربگذارید.

داخل یک‌کاسه بزرگکره و شکر را هم بزنید تا به صورت خامه ای در آید. سپس تخم مرغ ها را افزوده و خوب مواد را با هم مخلوط کنید . در انتها آرد را به مخلوط کره افزوده و همزده تا به صورت یک خمیر مایه نرم وتقریبن شل در آید.

خمیر مایه را داخل قالب یا قالب‌های از قبل چرب شده بریزید : سعی کنید سه چهارم قالب پرشود و فضا برای پف کردن کیک باقی بماند.

قالب را داخل فر از قبل گرم شده قرار دهید تا به مدت 18-15 دقیقه پخته – پف کرده و طلایی شوند.

سپس کیک ها را از فر خارج کرده و اجازه دهید کاملن سرد شوند و بعد از قالب خارج کنید. در این میان صد گرم کره را با صدوچهل گرم پودر شکر و یک ق غ شیر همزده تا به صورت خامه در آید.

کیک ها را از وسط نصف کرده و روی یک نصف مقداری خامه و روی نصف دیگر یک لایه مربا زده و دو تکه را روی هم قرار دهید.

در انتها مقداری پودر قند روی کیک ها پاشیده و تزیین کنید.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
