Persian Love Cake 2

Valentine’s day روز ولنتاین is a celebration of romance and love in many countries around the world including Iran. This day is a Western festival but perhaps you may know, in Iran we celebrate it twice. Yes that’s right twice. The first one is on the 14th Feb based on western calendar and second one is on the 24th Feb .

Iranian day of Love, which is called (Sepandarmazgaan سپندارمذگان ), is on the 24 of  Feb, and dating back to the Achaemenid Empire  the first Iranian Empire (550 to 330 B.C.). So in ancient time, It was a special feast of the women and girls. Men used to make them presents, all women and girls were treated as queens and whatever they wished, would be done by their men.

Persian love cake کیک عشق ایرانی

The following recipe, is called, Persian Love Cake or as we say in Farsi: کیک عشق ایرانی  and do you know why it is called that??well, In the legends from many antiquity, a young woman was in love with a Persian prince and she decided to make a cake with love and aromatic spices such as cardamom, nutmeg, rose water, orange juice, ….to his prince.

So, If you want to celebrate Valentine’s Day with exotic flavours cake, you are in right place. This is my Persian Love cake: It’s beautiful to look at and delicious to eat with a lemony flavour, floral scent of rose water, very moist texture and decorated with almond flakes and dried rose petals. Once you learned how to make this cake, you will be making it again and again. This cake has a moist texture and is awesomely delicious.

Persian Love Cake 2

  • 245 g Greek plain yogurt
  • 200 g white sugar
  • 110 g plain flour
  • 100 g almond flour
  • 90 g semolina
  • 5 whole eggs
  • 6 tbsp unsalted butter,
  • 6 tbsp vegetable oil
  • 2 tbsp rose water or orange blossom
  • 1 tbsp baking powder
  • 2 tsp ground cardamom
  • pinch of salt

Ingredients for syrup

  • 120 g 120g golden syrup or honey
  • 1 large lemon or orange juice
  • 2 tbsp rose water or orange blossom
  • 1 tsp saffron water
  1. Ingredients



  2. Preheat the oven at 175c degree.

    Add melted butter, vegetable oil and sugar into a large bowl. Mix together until well combined and creamy.




  3. Then add eggs to the butter mixture and whisk it well.



  4. Next, add rose water and yogurt. Whisk it for 1 minute.




  5. Then add, cardamom, baking powder, pinch of salt, plain flour, almond flour and semolina and mix together very well and make sure there are no lumps in the cake batter.



  6. Grease sides of a cake tin, and cover the base of the tin with parchment paper. Pour the mixture into the cake tin



  7. and scatter over almond flakes. Place it into preheated oven and bake for about 45-50minutes.



  8. Meanwhile, prepare the syrup: add golden syrup or honey and lemon juice into a saucepan. Bring it too a boil. Then, reduce the heat, add, rose water and saffron water and simmer the syrup for 5 minutes. Remove from the heat and add some dried fruits to the syrup and set aside.





  9. Use a wooden skewer and Poke several small holes on the cake and pour syrup all over the cake. Sprinkle with dried rose petals. Allow to soak for 1-2hour and them remove from the cake tin. Cut the cake and serve it as it it is or with ice cream or whipped cream, taste is just perfect.





کیک عشق

از چندین هزار سال پیش در ایران باستان روز عشق یا سپندارمذگان در پنجمین روز ماه اسفند جشن گرفته میشد. روزی که مردانزنان و دختران را هدیه میدادند و زنان را مانند ملکه احترام و عزت میگذاشتند واز اوامر زنان اطاعت میکردند .

اگر دوست دارید روز ولنتاین یا روز سپندارمذگان را جشن بگیرید – این کیک گزینه ی مناسبی هست طعم لیمویی و عِطر گلاب و هل و همچنین بافت خیس این کیک که با بادام و گلبرگ های گل محمدی تزیین شده طعم بینظیری دارد . . فقط کافیست این کیک را یکبار امتحان کرده و بعد دوباره ودوباره آن را درست خواهید کرد.

مواد لازم

دویست و چهل و پنج گرم ماست چکیده ساده

دویست گرم شکر سفید

صدوده گرم آرد سفید

صد گرم آرد بادام : بادام پودر شده

نود گرم سمولینا

پنج عدد تخم مرغ

شش ق غ کره بدون نمک آب شده

شش ق غ روغن مایع گیاهی

دو ق غ گلاب یا بهار نارنج

یک ق غ بیکینگ پودر

دو ق چ پودر هل

کمی نمک

مواد لازم برای تهیه شربت

صدوبیست گرم عسل یا گلدن سیروپ=شیره طلایی

یک عدد لیمو ترش بزرگ

دو ق غ گلاب یا بهار نارنج

یک ق چ زعفران دم کرده

طرز تهیه

فر را روی 175 درجه سانتیگراد گرم کنید.

کره ی آب شده – روغن مایع و شکر را داخل کاسه ریخته و با هم مخلوط کرده تا حالت خامه ای بگیرد. سپس تخم مرغ ها را اضافه نموده و مواد را هم میزنیم. در مرحله بعدیگلاب و ماست را افزوده و یک دقیقه تمام مواد را مخلوط کرده و بعد هل – بیکینگ پودرکمی نمکآرد سفیدبادام پودر شده و سمولینا را هم به مواد بالا اضافه کرده و مخلوط میکنیم تا به صورت یک مایه یک‌دست و روان در آید.

کف قالب کیک را با کاغذ روغنی پوشانده و دیواره های قالب را چرب میکنیم. مایه کیک را داخل قالب ریخته و روی آن را ورقه های بادام را پخش کرده وداخل فر قرار داده تا به مدت 50-45 دقیقه بپزد.

تا آماده شدن کیکداخل یک قابلمه عسل یا شیره طلایی و آبلیمو را ریخته وروی حرارت قرار میدهیم تا بجوش آید.سپس حرارت را کم کرده زعفران دم کرده و گلاب را افزوده و تا 5 دقیقه روی حررات کم میگذاریم بماند..

شربت را از روی حرارت برداشته و مقداری میوه ی خشک آناناس – پاپایا یا پسته خلالی شده را داخل شربت ریخته و کنار میگذاریم

وقتی کیک آماده شده با یک چنگال یا خلال چوبی چندین سوراخ روی سطح کیک درست کرده وشربت را روی کیک میریزیم. کمی گلبرگ خشک گل محمدی روی کیک پخش میکنیم. کیک را به مدت 2-1 ساعت کنار گذاشته تا شربت به خورد کیک برود و بعد از داخل قالب خارج میکنیم و سپس میتوان کیک را به همین صورتی که هست و یا با خامه یا بستنی سرو کرد
