Fried pizza

This pizza is incredibly tasty, amazing and easy to make . Just look at the fried bread of pizza and tell me am i right or wrong :).

Ingredients for dough

  • 250 g plain flour
  • 250 ml taped water
  • 10 g dried yeast
  • Pinch of Salt

 

Ingredients for topping

  • 400 g chopped tomatoes
  • 1 large onion, finely chopped
  • 1 tsp garlic paste
  • Some fresh basil leaves
  • Mozzarella cheese
  • Pinch of salt
  • Olive oil

 

Preparation

In a large bowl with flour, add pinch of salt and mix together. Dissolve yeast in 250 ml water and pour it on flour. Combine the flour. If it stick to your hand, add a little bit flour and knead until do not stick to your hand.. Cover the bowl with a towel to prove for 2 hours.

Meanwhile, prepare your topping for pizza. Heat the oil in a pan, add chopped onion and garlic, cook until soft. Add chopped tomato and salt. Allow to cook for 5 minutes. Set aside.

Once  the dough is ready, put some flour on the board, and place dough on it. Press the dough with your hand to take out air. Then, cut dough into two large portions or  small portions.
Now, heat the oil in a pan. Oil should be very hot.

Take one dough portion, and open it with rolling pin. Now, put it inside the hot oil. Allow to fry and then turn it other side. It is ready once it is crispy and golden. Place crispy bread on a plate and top it with sauce, some basil leaves and pieces of mozzarella cheese.
Sooooo deliciousness.

 

پیتزای سرخ شده
این پیتزا فوق العاده ه ه ه ه ه ه ه لذیذ هست و به پیتزای ناپلی در ایتالیا هم معروف هست. برعکس باقی پیتزاها که نیاز به فر دارد این پیتزا در روغن سرخ میشود.
فقط نون برشته شده در روغن رو ببینید و بگید حق با منه یا نه؟

مواد لازم برای خمیر پیتزا

دویست و پنجاه گرم آرد همه منظوره

دویست و پنجاه میلی لیتر آب

ده گرم یست یا خمیر مایه

کمی نمک

 

مواد لازم برای روی پیتزا

چهار صد گرم گوجه فرنگی خرد شده یا کنسروی

یک عدد پیاز درشت خرد شده

یک ق چ سیر له شده

نمک به میزان لازم

روغن مایع

طرز تهیه

آرد را با نمک مخلوط کنید. . پودر یست را در دویست و پنجاه میلی لیتر آب حل کرده و روی آرد بریزید و هم بزنید  تا خمیر درست شود اگر خمیر بدستتان چسبید کمی آرد اضافه کنید . . خمیر را  کمی ورز دهید وقتی به دست نچسبید یعنی آماده است.

 روی ظرف حاوی خمیر را با یک حوله برای 2 ساعت بپوشانید تا پف کند.
در این میان می توانید مواد پیتزا را آماده کنید. دریک تابه مقداری روغن را گرم کنید. پیاز و سیر را در روغن تفت دهید تا پیاز نرم شود. سپس گوجه های خرد شده و نمک را افزوده و5 دقیقه آن را بپزید و سپس از روی حرارت بردارید.

حالاروی تخته ی کار مقداری آرد بپاشید. خمیر آماده شده را روی تخته قرار دهید. با کف دست خمیر را فشار دهید تا هوای بین خمیر رها شود. سپس خمیر را به  دو قسمت بزرگ تقسیم کنید و یا به صورت طولی شکل دهید و آن را به قطعات کوچک ببرید. حالا- در تابه مقداری روغن را داغ کنید. یک تکه از خمیر را برداشته و با وردنه به صورت نازکی در آورید. روغن را امتحان کنید که خوب داغ باشد. سپس خمیر باز شده را داخل روغن گذاشته و سرخ نمایید و سپس پشت و رو کنید تا روی دیگر هم برشته شود.

این نان فوق العاده ترد و برشته می باشد. نان برشته را روی ظرف قرار داده و با سس و پنیر مازارلا و برگ های بازیل پر کنید. حتمن از خوردن این پیتزا لذت می برید.

I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
