Home-made Fish Seasoning

My mother used to prepare her own home made fish seasoning mix ادویه ماهی. It is a very nice and delicious mixture of dried herbs, freshly ground and good quality spices to increase the flavour of fish and yet you do not need any fancy ingredients. I use same recipe and I am very happy with that. This mixture works with nearly all kind of fish.

Season the fish before cooking gives your fish meal a lift. So It does not matter you are going to grill the fish or fry it but seasoning is a MUST.

You can make your own blend of fish seasoning from scratch and with your favourite dried herbs such as celery, rosemary, chives, parsley, coriander,taragon, dill leaves, mint, oregano, thyme,…. and spices like black peppr, red pepper, paprika,, salt, dried lemon, garlic, onion, ginger, cinnamon, paprika and yet you can customize your fish seasoning.

Home-made fish seasoning

  • 2 tbsp dried dill leaves
  • 2 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1 tbsp dried oregano
  • 1 tbsp black pepper
  • 1 tbsp onion powder
  • 2 tsp dried lemon zest, for a citrus touch
  • 1½ tsp dried parsley leaves
  • 1½ tsp coriander seeds powder
  • 1½ tsp salt

  2. Add all ingredients in a bowl,



  3. and mix gently to combine. Keep it in an airtight glass jar in a dark and cool cupboard for about 6 months.



  4. Coat the fish with oil.



  5. Apply good amount of the blend onto the fish.




  6. Melt the butter in apan and fry the fish. This blend can be used as a marinade too. In a bowl with some of the mixutre, add oil and vinegar or lemon juice and whisk together. Then apply onto the fish.



 

تهیه ادویه ماهی در منزل

ماهی دارای بوی خاصی هست که زیاد خوشایند نیست. به همین منظور استفاده از ادویه ها و سبزیجات باعث کاهش این بو و افزایش طعم و مزه ی بهتر ماهی و غذاهای دریایی خواهد شد.

ادویه ماهی که امروز میخواهم به شما معرفی کنم ترکیبی هست از چندین سبزی خشک و ادویه های تازهبا کیفیت خوب و معطر که طعم دهنده ی بسیار خوش عِطر و بویی هست.

تهیه ی این ادویه در منزل بسیار آسان هست و مهمتر اینکه نیاز به خرید ادویه و سبزی خیلی گران و خاصی نیست.

طعم دار کردن ماهی قبل از پخت آن باعث افزایش طعم و مزه ی آن خواهد شد.

به همین دلیل مهم نیست که میخواهید ماهی را کباب کنید یا سرخ کنید و یا آبپزو بخار پزکنیددر همه ی احوال استفاده از طعم دهنده و ادویه یک باید هست.

شما هم می‌توانید ادویه ی ماهی را مناسب با ذائقه ی خود در منزل و با استفاده از سبزیجات و ادویه های مورد علاقه ی خود تهیه کنید. سبزیجات خشک مثل: تره – جعفریگشنیزرزماریشویدترخونکرفس ویا ادویه هایی همچون: فلفل سیاهفلفل قرمزپاپریکادارچینزنجبیلپودر سیر – پودر پیازنمکلیمو خشکآویشناورگانو و …..

بطور کلی ادویه یک طعم دهنده ی غذا میباشد و

نکته ی مهم در تهیه یک ادویه خوش طعم و رنگ استفاده ازادویه های تازه و با کیفیت خوب میباشد. –

مواد لازم

دو ق غ پودر سیر

دو ق غ شوید خشک

یک ق غ پودر پیاز

یک ق غ پاپریکای دودی

یک ق غ فلفل سیاه

یک ق غ پودر اورگانو

دو ق چ پودر لیمو عمانی یا پوست خشک لیمو ترش

یک و یک دوم ق چ جعفری خشک شده

یک و یک دوم ق چ نمک

یک و یک دوم ق چ پودر تخم گشنیز

طرز تهیه

همه ی مواد لازم را داخل یک‌کاسه ریخته و با هم مخلوط کنید. ادویه ی آماده شده را داخل یک بطری ریخته و در جای

خشک و خنک و بدور از نور به مدت 6 ماه می‌توانید نگه داری کنید.

زمان استفاده مقدار مناسبی از آن را روی ماهی زده و آن را سرخ می کنیم. و اگر مایل یه گریل کردن ماهی باشید می‌توانید مقداری از ادویه را با کمی روغن و سرکه یا آبلیمو مخلوط کرده وروی ماهی زده و آن را گریل کرد.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
