Azerbaijani Yogurt Soup آش ماست آذربایجانی

Today I made yogurt soup. Yogurt is called (Maast ماست ) in Farsi and Qatiq گاتق in Azerbaijani language. Perhaps it makes you curious or surprise to hear about it. But it is a very tasty soup made of plain yogurt along with variety of fresh herbs and legumes. It’s a delectable yogurt based soup. I have to mention this yogurt soup is different from other famous yogurt soup which is called Ayran ashi آیران آشی or Ash-e doogh آش دوغ.

This soup ( qatiq shorbasi گاتق شورباسی) can be served hot or cold. Star and main ingrident in this recipe is yogurt along with fresh herbs such as spinach, parsley, coriander, tarragon, mint, ..

Ingredients
500 g Greek yogurt
4 cups water
1 medium onion, finely chopped
300 g mixed herbs includes: chives or spring onions, spinach, parsley, coriander , tarragon ( if tarragon is not available, use 1 Tbsp of dried tarragon)
4 cloves of garlic
1 small fresh chilli pepper
1 cup cooked chickpeas
1 cup cooked pinto beans
½ cup oats
2 beef stock cubes
1 Tsp dried mint for garnish
½ Tsp turmeric
½ Tsp sweet paprika
Salt to taste
2 Tbsp vegetable Oil

Preparation
In a big pot with yogurt, add 4 Tbsp water and mix until combined well. Add oat, beef stocks, turmeric, sweet paprika, salt and dried tarragon to the yogurt mixture and allow to cook for 15 minutes on a low heat until boiling. Stirring occasionally.

Heat the oil in a pan and saute chopped onion until soft. Set aside.
Once yogurt mixture started to boil, add oil, cooked chick peas and pinto beans, grated garlic, chopped herbs, sautéed onion and chilli pepper.

Stir occasionally, cook for 15 minutes on a medium heat.
Fry dried mint in a dash of oil and once soup is ready garnish with fried mint.

آش ماست آذری

آش ماست آذری از آش دوغ متفاوت هست به دلیل مواد ی که در تهیه ی اون بکار برده میشه.

آش و سوپ از غذاهایی هست که بین ایرانی ها طرفدار زیادی داره. آش ماست در آذربایجان بسیار معروف بوده و خواهان زیادی داره.

همونطور که از اسم غذا مشخصه ستاره ی اصلی این غذا ماست هست که میتونه ماست ترش – شیرین باشه که می تونید با توجه به طبع خودتون نوع ماست رو انتخاب کنید. در تهیه ی این آش از سبزیهای تازه و معطر استفاده میشه که عطر خاصی به آش میده.

مواد لازم

پانصد گرم ماست

چهار پیمانه آب

یک عدد پیاز متوسط خرد شده

سیصد گرم سبزی شامل تره یا پیازچه- جعفری-گشنیز- اسفناج و تلخون

چهار حبه سیر تازه خرد شده

یک پیمانه نخود آبگوشتی پخته شده

یک پیمانه لوبیا چیتی پخته شده

نصف پیمانه بلغور

یک عدد فلفل تند خرد شده

دو عدد عصاره گوشت گوساله

یک ق چ نعنا خشک

نصف ق چ زردچوبه

نصف ق چ پاپریکای شیرین

نمک به میزان نیاز

روغن مایع یا کره

طرز تهیه

در یک قابلمه ماست را با 4 پیمانه آب مخلوط کنید تا به صورت دوغ غلیظی در بیاید. بلغور- عصاره ی گوشت- زردچوبه – پاپریکای شیرین – نمک و تلخون خشک را به دوغ اضافه کنید وبگذارید برای 15 دقیقه با حرارت ملایم بپزد یا تا زمانی که بجوش بیاید. گاهگاهی آش را هم بزنید.

پیاز را هم در کمی روغن تفت بدهید.

زمانیکه دوغ به جوشن آمد- روغن – نخود و لوبیای پخته – سیر رنده شده – سبزیجات خرد شده – پیاز تفت داده شده و فلفل خرد شده را به آن اضافه کنید و بگذارید برای 15 دقیقه آرام بپزد.

زمان سرو آش ماست را با نعنا داغ سرو و میل کنید.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
