Azari cabbage aash (Aashe kalam Azari

Azerbaijan province  is located in NW of Iran. People of this region have their own beautiful recipes. This is one of those. It is called ‘Azari cabbage aash.

 

 
Ingredients
1 cup oatmeal
½ cup cooked chickpeas
1 cup cabbage leaves, finely chopped
2 cups fresh herbs: spring onions, coriander, parsley, spinach, finely chopped
4 tbsp fried onions
Salt- chili powder to taste
½ tsp turmeric
2 beef stock cubes
3-4 tbsp Yogurt
1 tsp dried mint (fry in oil for 1 minute)
Oil

 

 

Preparation
Bring to boil water in a pot, add beef stock cubes and dissolve them. Then, add cooked chickpeas, oatmeal, oil and spices. Allow to cook for 10 minutes. Stir occasionally. Then, add chopped cabbage leaves, herbs and fried onions. Let aash cook for 20 minutes over low to medium heat.
Pour your aash in a plate, garnish with fried onions, mint, and 2-3 spoons of yogurt.

 

آش کلم آذری

این آش خوشمزه و آسان پز تو هوای سردو ابری  خیلی می چسبه

مواد لازم

یک پیمانه برگ کلم سفید خرد شده

یک پیمانه بلغور

نصف پیمانه نخود پخته شده

دو پیمانه سبزی خرد شده شامل تره – جعفری – گشنیز و اسفناج

چهار ق غ پیاز سرخ شده

نصف ق چ زردچوبه

دو قرص عصاره ی گوش گوساله

نمک و فلفل قرمز به میزان نیاز

روغن

طرز تهیه
مقداری آب را در قابلمه به جوش آورید. عصاره های گوشت را داخل قابلمه ریخته و حل کنید. سپس نخود پخته شده – بلغور- روغن و ادویه هارا اضافه کنید. اجازه دهید مواد داخل قابلمه برای 10 دقیقه کمی پخته شوند. گاه گاهی مواد را هم بزنید که ته قابلمه نچسبد. سپس کلم ها – سبزیجات خرد شده و پیاز سرخ شده را به مواد بالا اضافه کنید. بگذارید آش برای 20 دقیقه با حرارت پایین- متوسط بپزد. زمان سرو با پیاز و نعنا داغ و ماست تزیین کنید و با نان و کره می توانید میل کنید.

Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
